Tasting Ningbo cuisine in Wyndham Hotel's Ningbo Food Festival

A Ningbo food festival will be held at Wyndham Hotel Xiamen in its Xin Nan Xuan Chinese Restaurant from 12th to 23rd April.
During the festival, chefs from Ningbo City will prepare a selection of Ningbo dishes for guests.
Ningbo, also known as Yong ( ) for short, is located on the northeastern of Zhejiang province. Ningbo is not only famous for its history and culture, but also for its cuisine, also called Yongbang Cuisine ( ). Ningbo cuisine is noted for seafood, for its special flavor and taste, careful selection of ingredients, and its unique, fresh and tender tastes. Specializing in steamed, roasted and braised seafood, Ningbo cuisine is particular in retaining the original freshness, tenderness and softness.
The food festival will combine traditional Ningbo cuisine and local snacks and disserts, offering customers with authentic Ningbo dishes.
Traditional Ningbo cuisine include the most famous Crystal Sugar Turtle (Bingtang Jiayu ), the number one of Ningbo top ten dishes. The soft-shelled turtle cooked with crystal sugar takes on a yellow luster. The dish is golden in color, tasty and nutritious, integrating the flavors of sweetness, tartness, scent, and saltiness. It retains heat long as the turtle is cooked within the wrapping of the seed powder of Gordon Euryale.

The traditional Ningbo cuisine: Yellow Croaker Wrapped in Dried Bean Curd Sheet ( )

Another traditional Ningbo cuisine is Yellow Croaker Wrapped in Dried Bean Curd Sheet ( ), a unique Ningbo dish that should be prepared with a very skillful cook: wrap croakers with bean curd sheets, cut it into blocks and fry them until they turn golden. This dish is best enjoyed with vinegar.
Other renowned Ningbo dishes include Yellow Spiral Shell with Wine, Blood Clam, Salted Sea Crab, Shepherd s Purse and Croaker, Taro with Three Fresh Delicacies and Roasted Pork with Green Moss.
In addition, some traditional local Ningbo disserts can be tasted during the festival such as Baked Rice Cake with Green Moss, Glutinous rice dumpling in sweet rice wine, and Ningbo Tang Yuan or Rice Dumpling Ningbo Style, small stuffed buns which are boiled. The stuffing is usually ground sesame mixed with sugar and is wrapped with sticky rice powder.
The Ningbo Food Festival is set to bring an authentic Ningbo food experience to Xiamen citizens.
