DeltaTRAK, a leading innovator of Food Safety and Cold Chain Management solutions today announced it is partnering with George Nakamura, a national food safety and sanitation expert, to present research on rapid bacterial enzyme detection technology at the Food Safety Summit April 19 - 21 in Washington, DC. Bacterial enzyme detection is a reliable and proven technology providing the food industry and regulatory authorities with the latest first line of defense for food safety. Using enzyme detection technology will allow growers, producers and processors to identify the presence of bacteria in the field in as little as 20 minutes.
"Antigen/antibody technologies commonly used for bacterial detection such as ELISA, culture and PCR tend to be slow, cumbersome and expensive," said Frederick Wu, president and CEO of DeltaTRAK. "With enzyme detection users can significantly cut the time it takes to detect the presence or absence of bacteria which will facilitate checking of critical control points effectively and rapidly. This technology is truly a breaking development in "on the spot" food safety bacterial detection practices. Unlike ATP assays that are known for producing many false positives and will indicate the presence of ATP from animal, human and vegetable cells as well as living or dead bacteria, yeast or mold, our tests will identify the presence of living bacteria."

Mr. George Nakamura has over 40 years of experience supervising and evaluating sanitation and environmental health programs and personnel. Mr. Nakamura has made numerous presentations before governing bodies, advisory boards, national, state and local committees and is the author of a recent paper on the 2011 California State Food Handler Card Law - SB602. He also served as the Chairman of the National Environmental Health Association's Food Safety and Protection Section for more than 18Years.
